Stuffed Flounder

Whole flounder stuffed with crabmeat dressing and baked in creole sauce

- Flounder (whole or fillets), enough to place “white side down”

- Crabmeat dressing (see “Deviled Crab Meat”)

- Butter, for pan

- Creole sauce (see “Creole Sauce” recipe)


Instructions

1. Place flounder white side down and split top lengthwise.

2. Stuff with crabmeat dressing.

3. Place in a well-buttered pan.

4. Pour creole sauce over fish and stuffing.

5. Bake at 350°F for 20 minutes. Serve hot.
