Mexican Roll Ups

Savory baked tortilla rolls with eggs, mushrooms, and cheese

- 2 cups mushrooms, sliced

- 1/4 cup green onions

- 1/8 cup bell pepper

- 2 tablespoons butter

- 8 flour tortillas

- 4 eggs, beaten

- 2 cups milk

Steps:

1. Sauté mushrooms, onions, and bell pepper in butter until softened

4. Whisk eggs, milk, flour, garlic powder, and pepper sauce until smooth

5. Pour over wraps

6. Bake at 350°F for 35 to 40 minutes

7. If refrigerated up to 24 hours before baking, bake 350°F for 45 to 50 minutes instead

- Optional toppings/add-ins: black olives, shredded cheese, picante sauce, or chopped tomato
