Faux Fried Chicken

Oven-baked chicken coated in flour and cracker crumbs

Ingredients:

- Flour mixed 1:1 with Ritz cracker crumbs

- Chicken pieces (bone-in takes longer)

- 1/2 inch canola oil in 13×9 pan

- Salt and black pepper


Steps:

1. Preheat oven to 350°F.

2. Heat 1/2 inch canola oil until hot (not smoking).

3. Moisten chicken in water and season with salt and pepper.

4. Roll in flour + Ritz mixture.

5. Add pieces to hot oil and bake 20 minutes.

6. Turn and bake 20 more minutes until done.


Notes:

- Secret is to have oil very hot but not smoking
