E-Z Caramel Popped Corn

Baked caramel popcorn using brown sugar and Karo syrup

Ingredients:

- 4 bags microwave popcorn, popped

- 1 cube butter or margarine

- 2 cups brown sugar

- 1 cup white Karo syrup

- 1 teaspoon vanilla

- 1 teaspoon baking soda

- Foil wrap for cooling


Steps:

1. Pop 4 bags microwave popcorn.

2. Place popped corn in a large container; remove all unpopped kernels.

3. Transfer to a BIG pan with sides or 2 (9×13) pans.

4. Mix butter, brown sugar, Karo syrup, and vanilla in a saucepan.

5. Boil while stirring constantly.

6. Lower flame when boiling starts; continue to boil 5 minutes only.

7. Stir in 1 teaspoon baking soda (will foam).

8. Pour over corn; mix thoroughly.

9. Bake at 250°F for 1 hour, stirring every 15 minutes.

10. Pour onto foil wrap; cool; break into pieces; store airtight.


Notes:

- No food value but a delicious treat

- If sticky after cooling, re-cook at 250°F for 15 minutes
