Double-Good Potatoes

Twice-baked potatoes

3. Bake 55 to 65 minutes directly on oven rack until soft when squeezed gently with a pot holder.

4. Cool until safe to handle, then cut off the top third and scoop insides without breaking skins; save skins.

5. Combine potato insides with butter and 1/2 cup warm milk, adding more milk if stiff.

6. Stir in chives, salt, and pepper.

7. Spoon mixture back into skins on a baking sheet.

8. Bake 15 minutes more until lightly browned on top.
