Caramelized Flan

Custard flan baked in caramel

Ingredients:

- 3/4 cup sugar, caramelized

- 3 eggs

- 1 can sweetened condensed milk

- 1 cup whole milk

- 1 teaspoon vanilla

- Boiling water bath to 1/2 up the side of flan pan


Steps:

1. Heat 1-quart Pyrex dish in oven at 325°F.

2. Pour caramelized sugar into dish and cool 20 minutes.

3. Combine eggs, condensed milk, whole milk, and vanilla; beat well.

4. Pour over caramel.

5. Tent foil loosely over pan.

6. Bake 1 1/2 hours in water bath.

7. Cool 1 hour, cover, and refrigerate overnight.

8. To serve: run knife around edges and invert onto platter so caramel is on top.


Notes:

- Sounds hard but is really very easy
